roasted chickpeas
A healthy snack to eat by the handfuls that the whole family will enjoy. Chickpea fun fact…chickpeas have been a part of the human diet for over 7,500…not a shabby run for this lovely legume. These little orbs are packed full of protein, fiber, vitamins and a whole host of minerals like iron, zinc and manganese. What I like about them, is that much like chia seeds, chickpeas are a slow-release food, which means you digest it at a slower rate, keeping you happy and satiated for a longer time. And…they taste wonderful, especially roasted! Nom! Nom! Nom!
Ingredients:
1-15oz can of chickpeas, rinsed and thoroughly dried
1T Olive oil
salt
pepper
*other seasonings of your choice
Preheat oven to 400ºF.
After you’ve rinsed your chickpeas and thoroughly dried them, remove any loose skins and discard.
On a baking sheet, toss the chickpeas with the olive oil and salt and arrange in a single layer.
Bake for 30-45 minutes, giving the baking sheet a shake every 10 minutes or so.
Once the chickpeas have darkened to a golden brown and are crispy, remove from the oven.
While the chickpeas are still warm, toss with the seasoning of your choice.
Chickpeas will gradually start to soften as they sit out, so serve right away to enjoy their crisp happiness.
I love mashing up some rosemary with garlic powder, pepper and salt in a pestle and tossing that on the chickpeas. But you can’t go wrong with whatever flavor you want…try sweet and spicy with a brown sugar/cayenne powder blend, or how about taco-chickpeas? Experiment and have fun finding your family’s favorite combination!
