Garlic soup
Without a doubt, the cure for what ails you…even if that ailment is just a relentless aching for garlic soup. This seemingly mild-looking clear broth is packed with such a punch of flavor and bite that it just might knock you out of your seat. It’ll definitely knock any sickness out of you. And it most definitely will ward off any pesky vampires that are hanging about.
Ingredients:
8 cups chicken or vegetable stock
1 cup white wine (dry preferably)
20 cloves of garlic, peeled and halved
pinch of red pepper flakes
Combine all ingredients into a soup pot.
Bring to a boil, reduce and simmer covered for around one hour, or until the garlic is soft.
Strain the broth through a sieve and serve.

This soups partners perfectly with a good, hunk of bread or even better…freshly sautéed garlic croutons. I also love adding a grate or two of a good hard cheese for those days when I’m feeling extra wild. Nom! Nom! Nom!
